Pesto Sauce with a Kick
One of my fave pasta sauce is Pesto! But because most of the time the recipe includes nuts like pine nuts or walnuts, my husband can’t enjoy it the way I do due to allergies.
So I thought of making my own version of it! So far he gave me 2 thumbs up for it! Just like Pesto!
Ingredients:
2 cups of fresh Basil leaves (I got mine from our own backyard! Yay!)
1 & 1/2 cups of Virgin Olive Oil
1 cup grated Parmesan cheese
3 gloves of garlic (If you love garlic, make it 6!)
1/2 teaspoon of garlic salt
1 tablespoon of fresh lemon juice
5 pieces of roasted peanuts (or walnuts or 1/2 cup of pine nuts)
Pinch of pepper
Optional: 1/2 teaspoon of chili powder or chili pepper powder (for a kick)
Using a Blender:
START with the liquid ingredients, softer to the hardest ingredients when you start putting the ingredients inside your choice of blender. Blend it according to the consistency you prefer.
PASTA is up to you which kind/ shape you want to use.
– cook it according to the directions.
THEN what I do in a separate pan, I mix the cooked pasta and slowly put sauce according to the servings I needed. Heat it up a little on low fire. Then plate it, spread some Parmesan cheese on top and garnish some greens for presentation!

*You can refrigerate the remaining sauce. Or use it as a dip. Toppings on your bread.
