Green eggs! Scramble it!
It’s always a good morning because we have a great God! I do hope you are enjoying one!
Today, I asked my husband what he wants for breakfast. He answered: “Because it’s the 4th of July, let’s honor it by having an American style breakfast!” Ooooops! Sorry “longganisa” you need to go back in the freeeeeezer!
So I thought of having eggs and bacon instead!
Thinking of healthiness, I decided to go green with eggs… I’ve seen other people doing this, why not try it in our very own home!
All you need:
6 medium eggs
1/2 teaspoon of any hot sauce (You can add more if you want really spicy food)
1/2 cup of spinach
1/2 cup of moringa leaves (Malunggay)
3 small tomatoes
1/4 onion
1 piece of hot pepper
ground black pepper
1/8 cup of grated mexican mixed cheese
2 tablespoon olive oil
parsley for garnishing
Beat the eggs
Chopped all veggies into smaller pieces
1. Heat up the olive oil in a wider pan
2. Sauté onion first until brown, then add the tomatoes until the aroma comes out; And you can start adding the hot pepper, moringa leaves and spinach.
3. Add the eggs, mix everything then season it with black pepper then add the cheese & hot sauce.
4. Mix & scramble everything until you see the color changing and eggs are becoming fully cooked.
Ready to plate!
Garnish it with some of the parsley.
And now, just prep your hot choco drink or coffee, serve it with bread or corn cob with this scrambled egg and bacon! It’s indeed a Happy 4th of July!!!!!!!!! Happy meal, happy tummy!
