Pork Adobo

This is a Filipino Dish that is famous not only to the Filipinos but even to the Foreigners!
And that includes my sweet Husband.

Adobo is a way of cooking using soy sauce & vinegar. Through decades and decades it evolved already to different kinds of techniques and styles in cooking an Adobo. It depends to the different provinces you visit in the Philippines. Adobo can also be use in Chicken, Squid, certain fish or even combination of Pork & Chicken. You can also put a twist by adding potatoes, or eggs, or even chili pepper if you prefer it spicy.

          Anyways, here is my simple version of Pork Adobo that my husband requested.

All you need are the following:
1 lb pork chop or pork belly (sliced lengthwise)
1/2 cup soy sauce
1/2 cup vinegar
1/2 cup water
1/2 gloves minced garlic
1 tsp whole black peppercorn
4 pieces laurel leaves
Salt in case you prefer to add (Optional)

Soaking.

Soak the pork in your soy sauce, 1/4 cup vinegar, and garlic. Mix it very well.
Let it stand for 30 minutes.
Heat the pan. Pour in your Pork mixture. Let it cook for 10 minutes. Then until half way cooked, add the remaining 1/4 cup vinegar, water, peppercorn, and the leaves. Sizzle until cooked for about 30 minutes. If you want it dry, add more 10 minutes.

Serve over rice or toasted bread.
